Sloth cake

Sloth cake

I never thought I’d say this, but this week I’m making a sloth cake as part of my animal cake series!

I got a lot of requests for this cake, and while it might seem random a lot of people out there really love sloths… including Kristen Bell!!

Ingredients

Chocolate Cake Layers

1 cup or 2 sticks unsalted butter, room temp (226g)
2 1/2 cups granulated sugar (500g)
4 large eggs, room temp (224g)
1 cup hot coffee or water (240ml)
1 cup buttermilk, room temp (240ml)
1 cup unsweetened cocoa (80g)
3 cups self-rising cake flour (360g)

Chocolate Buttercream Frosting

3 cups unsalted butter, room temperature (678g)
1/2 cup creamy peanut butter (120g)
1 Tbsp vanilla extract (12ml)
1 tsp salt (6g)
10 cups powdered sugar (1250g)
1/3 cup heavy cream or whipping cream (80g)
1/2 cup unsweetened cocoa powder (40g)
1/4 cup chopped dark chocolate or chips, melted and cooled (45g)

Rice Krispie Treats – Sloth Arms and Legs

2 cups mini marshmallows (100g)
3 cups puffed rice cereal (75g)

Sloth Cake Decoration

1/2 cup black fondant
1/2 cup white fondant
4 toothpicks
Serrated Knife
Small offset spatula
Small acetate sheet
Thick bubble tea straw or wooden dowel
Small grass piping tip

PREPARATION

Step 1
Preheat the oven to 160 degrees. Grease the springform pan and line it with baking paper. Mix the butter and sugar until creamy, gradually stir in the eggs. Mix the flour, baking cocoa and baking powder and add to the dough alternately with milk and mix.

Step 2
Fold 3 sheets of kitchen roll together. Prepare aluminum foil that is 4 cm longer than the strip of kitchen roll. Moisten the kitchen roll with cold water and squeeze it out. Place the kitchen roll on the aluminum foil and fold it towards the middle so that it is wrapped in the aluminum strip. Place the strip around the pan, press the ends of the strip together.

Step 3
Put the dough into the pan and smooth it out. Bake for 70 minutes. Let the cake cool, remove from the pan, cut straight if necessary and divide horizontally into 3 layers.

Step 4
Chop the chocolate and melt it.  Allow to cool so that it is liquid but lukewarm. Beat butter, powdered sugar, vanilla extract & salt. Stir in cooled chocolate & beat.

5th step
Download the template, print it out & cut it out. Roll out dark brown fondant & cut out the areas around the eyes. Cut out eyes from black fondant. Cut out the nose from black fondant & form the mouth.

6th step
Use small white fondant balls to form reflections in the eye & attach them with sugar glue. Roll out light brown fondant & cut out the snout. Attach the nose & mouth to the snout & eyes to brown stripes. Allow the decoration to harden on baking paper.

7th step
Wash the blueberries & pat dry. 1. Place the base on a plate & spread the cream on it. Spread half of the blueberries on top, spread some cream on top. 2. Place the base on top & press down.

8th step
Spread some cream on top, spread the remaining blueberries on top, press down & 3. Place the base on top.  Cover the cake all around with cream.

Step 9
Put the remaining cream in a piping bag. Place decorative elements on the cake. Decorate the cake all around with chocolate dots. Finally, pipe 2 rows on the top of the cake and 3 dots on the sloth’s forehead. Place the cake in the fridge.
