Homemade chorizo
Homemade chorizo is a delicious pork sausage seasoned with garlic, paprika and other spices. It is made in an artisanal way, which gives it a unique and authentic flavor.
Ingredients:
• 1 kg minced pork (preferably with a little fat)
• 100 grams of pancetta or bacon
• 3 cloves of garlic, finely chopped
• 2 teaspoons of sweet paprika
• 1 teaspoon of hot paprika (adjustable according to your preference)
• 1 teaspoon ground cumin
• 1 teaspoon dried oregano
• 1/2 teaspoon salt
• 1/2 teaspoon ground black pepper
• Pork tripe or sausages (to stuff the chorizo)
Make sure you have good quality pork, preferably lean and with some fat for juicy chorizo. Wash your utensils and the natural or synthetic casings that you will use as a wrap well before starting the preparation to ensure hygiene throughout the process.
Preparation:
• In a large bowl, mix the minced pork with the pancetta or bacon chopped into small pieces.
• Add the finely chopped garlic cloves, sweet paprika, hot paprika, cumin, oregano, salt and ground black pepper to the meat mixture. Make sure all the ingredients are well distributed.
• Wash the pork intestines or sausages in cold water several times and then soak them in salt water for about 30 minutes to eliminate any unpleasant odors.
• Rinse the casings with fresh water again and then drain them.
• Stuff the meat and spice mixture into the casings with the help of a funnel or a sausage stuffing machine. Make sure the chorizo is very compact and without air bubbles.
• Tie the ends of the sausages with strong kitchen twine, leaving enough space between each one to then cut them into individual portions.
• Let the chorizos rest in the refrigerator for at least 24 hours so the flavors can mix and develop.
• You can grill the homemade chorizos, fry them in a pan or roast them in the oven at 180°C (350°F) for about 30-40 minutes, or until they are cooked through.
