Healthy Raffaello

Healthy Raffaello

Chocolates are easy to make yourself – including these healthy Raffaello.  The pralines are ready in just 15 minutes, then they just need to be cooled a little.

INGREDIENTS (For 12 pieces)

2 tablespoons (level) coconut oil
4 tablespoons coconut butter
1 tablespoon cashew butter
4 tablespoons maple syrup
1 pinch bourbon vanilla extract
1 drop rum flavoring
3 – 4 tablespoons coconut flakes for rolling
12 whole almonds

PREPARATION

Step 1
Melt the coconut oil, coconut butter and cashew butter in a small bowl in a water bath. Stir briefly, then remove from the heat. Add maple syrup, vanilla extract and rum flavoring. The mixture is very liquid. Place the bowl in the refrigerator for about 1-2 hours or until the mixture solidifies.

Step 2
Put the coconut flakes in a flat bowl. Take a teaspoon of the solid mixture from the bowl. Knead briefly with your fingers until the mixture becomes smoother, then press an almond kernel into the mixture. Roll the mixture into a ball.

Step 3
Roll these directly in the coconut flakes, then place the balls on a plate. Continue like this until all of the Raffaello mixture has been used up. Refrigerate the healthy Raffaello until serving.
