Apricot dumplings
Apricot dumplings with quark dough are a real classic. The fluffy apricot dumplings with fruity filling taste like grandma’s. With this recipe you can easily make them yourself!
INGREDIENTS (For 6 pieces)
FOR THE DOUGH
50 g butter
1 egg (size M)
250 g low-fat quark
2 packs of vanilla sugar
130 g wheat flour (type 550)
1 pinch of salt
ALSO
2 tbsp butter
50 g breadcrumbs
6 ripe apricots
6 sugar cubes (alternatively: 2 tbsp sugar)
A little powdered sugar for sprinkling
A little mint for garnishing if desired
PREPARATION
1st step
For the dough, melt the butter and put it in a mixing bowl. Add the egg and mix with the butter using a whisk. Add the quark, vanilla sugar, flour and salt and mix all the ingredients with a wooden spoon to form a sticky dough. Let the dough rest for about 5 minutes.
2nd step
In the meantime, melt the butter in a pan. Add breadcrumbs and toast over medium heat, stirring, until the breadcrumbs are lightly browned. Set aside for a moment.
Step 3
Wash the apricots, pat dry, cut in half (not completely in half!) and remove the stone. Carefully fill a sugar cube or alternatively 1 teaspoon of sugar into each cut apricot. Bring about 1.5 liters of water to the boil in a large pot.
Step 4
Take about 3 tablespoons of the dough in your hand with moistened hands and press it flat in your hand. Place an apricot in it and form the dough into a closed ball. Moisten your hands again and make a total of 6 Austrian apricot dumplings in this way.
