INGREDIENTS (For a 20 cm springform pan)
FOR THE DOUGH
200 g dark chocolate
150 g butter
4 eggs (size M)
25 g icing sugar
1 pinch of salt
150 g sugar
85 g wheat flour (type 405)
3 g baking powder
20 g ground almonds
FOR THE PUDDING
50 g sugar
1 packet of vanilla sugar
25 g cornstarch
1 egg yolk (size M)
200 g cream
FOR THE FILLING
500 g mascarpone
2 tbsp icing sugar
1 tsp vanilla extract
4 chocolate bars
FOR THE GANACHE
100 g cream
200 g dark chocolate
20 g cocoa butter
FOR THE DECORATION
300 g chocolate decorations (e.g. Surprise egg, Kinder bars, chocolate bonbons,…)
PREPARATION
1st step
Line a springform pan (Ø 20cm) with baking paper. Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). For the dough, melt the chocolate coating with butter over a water bath, let cool slightly.
2nd step
Separate the eggs, put the egg whites to one side. Sift the icing sugar into the chocolate mixture and stir until fluffy. Gradually stir in the egg yolks.
3rd step
Beat the egg whites with salt and sugar until stiff and fold into the chocolate mixture. Sift the flour with the baking powder and stir in. Add the almonds and stir into the dough. Pour the dough into the prepared springform pan and bake in the preheated oven for approx. 50 minutes.
4th step
Meanwhile, for the pudding, stir the sugar, vanilla sugar, starch and egg yolk with 2 tablespoons of the cream until smooth. Boil the rest of the cream. Add the starch mixture to the cream while stirring constantly. Continue stirring until the pudding thickens noticeably, reduce the heat and leave the pudding to cool covered.
