HOMEMADE SHORTBREAD

HOMEMADE SHORTBREAD

Ingredients:

1 ½ cups of wheat flour
1 cup of sugar
4 large eggs
½ cup of butter (at room temperature)
1 cup of milk
1 tablespoon of baking powder
1 teaspoon of vanilla
Zest of a lemon or orange (optional)

Preparation:

1. Preheat the oven to 180°C (350°F).

2. Prepare a cupcake or shortbread mold and place the paper liners (if you have them).

3. In a large bowl, beat the butter and sugar until you get a smooth and creamy mixture.

4. Add the eggs one by one, making sure to mix well after each addition.

5. Add the vanilla and the lemon or orange zest, if you decide to use it, to give it a citrus touch.

6. Sift the flour together with the baking powder.

7. Add this flour mixture little by little to the egg and butter mixture, alternating with the milk. Beat until well combined, but do not overbeat so that the mantecadas are fluffy.

8. Pour the batter into the cupcake liners or moulds, filling them about 2/3 full to leave room for the mixture to rise.

9. Bake in the preheated oven for 20-25 minutes, or until the mantecadas are golden and a toothpick inserted in the centre comes out clean.

10. Remove the mantecadas from the oven and allow them to cool on a wire rack.
