Mixed Berry Shortcake Recipe
Light, fluffy cake layers with fresh berries and whipped cream!
Ingredients
For the Cake:
✔ 2 ½ cups all-purpose flour
✔ 2 ½ tsp baking powder
✔ ½ tsp salt
✔ 1 cup unsalted butter, softened
✔ 1 ¾ cups granulated sugar
✔ 4 large eggs
✔ 2 tsp vanilla extract
✔ 1 cup buttermilk
For the Berry Filling:
✔ 1 ½ cups strawberries, sliced
✔ ¾ cup raspberries
✔ ¾ cup blueberries
✔ 2 tbsp granulated sugar
✔ 1 tsp lemon zest
For the Whipped Cream:
✔ 2 cups heavy cream
✔ 3 tbsp powdered sugar
✔ 1 tsp vanilla extract

Directions
1️⃣ Make the Cake:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In a separate large bowl, beat butter and sugar until fluffy. Add eggs, one at a time, beating well after each. Stir in vanilla extract.
Gradually mix in the dry ingredients, alternating with buttermilk, starting and ending with the flour mixture.
Divide the batter evenly between the cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
2️⃣ Prepare the Berry Filling:
In a bowl, mix strawberries, raspberries, blueberries, sugar, and lemon zest. Let sit for 15 minutes to release juices.
3️⃣ Whip the Cream:
In a cold bowl, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form.
4️⃣ Assemble the Shortcake:
Place one cake layer on a plate. Spread a layer of whipped cream, followed by the berry mixture.
Place the second cake layer on top. Spread more whipped cream and decorate with extra fresh berries.
5️⃣ Chill & Serve:
Dust with powdered sugar and refrigerate for 30 minutes before serving for the best flavor.
