Super Healthy Cake

Fluffy and Super Healthy Cake (sugar-free, full of flavor)

Ingredients:

85g oat flour
2 fresh apples
1 very ripe banana
2 eggs
7g baking powder
1 pinch of salt
½ tsp ground ginger
1 tbsp stevia or equivalent natural sweetener
50g dried cranberries (rinsed in hot water)
4-5 dried apricots (washed and chopped)
1 tbsp Greek yogurt or sour cream
60g chopped walnuts

Preparation:

1. Peel and cut the apples into small pieces, then blend them until you have a smooth puree.

2. Place the puree in a large bowl, add the oat flour and mashed banana. Mix until combined.

3. Add the eggs, baking powder, salt, ginger, and stevia. Stir until the mixture is smooth.

4. Drain and dry the blueberries and dried apricots, then add them along with the yogurt.

5. Grease a baking pan with a little olive oil and sprinkle with oat flour.

6. Pour the batter into the pan and decorate with walnuts and a few blueberries on top.

7. Bake in a preheated oven at 180°C for about 40 minutes, or until a toothpick inserted comes out clean.

8. Let cool before removing from the pan to maintain its perfect shape.

Tip: This cake is ideal for breakfast, snacks, or as an energy-boosting snack.
