CONDENSED MILK COOKIES
CORNSTARCH AND CONDENSED MILK COOKIES
Ingredients: (50 cookie cups / 25 alfajores)
100 g butter
1 egg yolk
1 lemon zest
30 g powdered sugar
150 g condensed milk
250 g cornstarch
80 g 0000 flour
1/2 tsp baking powder
400 g dulce de leche

Preparation
In a bowl, combine the butter, powdered sugar, egg yolk, and condensed milk until pale in color.
Flavor with lemon zest. Sift and add the cornstarch, flour, and baking powder in two batches.
The mixture will be somewhat sticky. Let it rest in the refrigerator for 1 hour covered with plastic wrap.
Weigh a 10 g portion and shape it into a sphere.
Place on a baking sheet lined with parchment paper/silkpat/nonstick sheet. Press lightly with a fork.
Bake for 8 to 10 minutes at 350°F (170°C) or until the bottom is firm and lightly golden.
Cool completely. Fill with dulce de leche to taste.
