Chocolate Cookie Pie
Ingredients
For the Cookie Base
1 cup (225 g) unsalted butter, softened
1 cup (200 g) brown sugar
½ cup (100 g) white sugar
2 large eggs
1 tablespoon vanilla extract
2 ½ cups (315 g) all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups (250 g) chocolate chips
Optional Filling (Extra Gooey Center)
½ cup chocolate spread or melted chocolate
¼ cup caramel sauce (optional)

Instructions
Preheat Oven
Preheat oven to 175°C (350°F).
Grease a pie dish or baking pan.
Make Cookie Dough
In a large bowl, beat butter, brown sugar, and white sugar until creamy.
Add eggs and vanilla, then mix well.
In another bowl, mix flour, baking soda, and salt.
Gradually add dry ingredients to wet mixture.
Fold in chocolate chips.
Assemble the Pie
Press about ⅔ of the dough into the bottom of the pie dish.
Spread chocolate spread or caramel (if using).
Cover with remaining dough.
Bake
Bake for 30–35 minutes or until golden brown on top.
The center should remain slightly soft.
Cool & Serve
Let cool for 15–20 minutes before slicing.
Serve warm with ice cream if desired.
