Fried noodles

Fried noodles

Fried noodles with egg, chicken and vegetables always work!  You can easily make this delicious dish yourself from the wok or pan.

INGREDIENTS

FOR THE PASTA

250 g wok noodles
1 tbsp sesame oil
2 cloves of garlic
1 large carrot
2 – 3 pcs. spring onions
100 g fresh bean sprouts
120g chicken breast
2 eggs
2 tbsp peanut oil (or frying oil)

FOR THE SAUCE
3 tbsp soy sauce
2 tbsp oyster sauce
1 tsp sugar
1 – 2 tbsp water
1 pinch of pepper (or chili powder)

PREPARATION

1. Boil the wok noodles in bubbling water for about 5 minutes, then drain, rinse briefly with cold water and allow to drain.  Marinate the noodles with the sesame oil.  Peel the garlic and chop in to fine slithers.  Peel the carrot and slice into fine strips.

2. Wash and clean the spring onions and cut them into thin rings.  Place the bean sprouts in a bowl of cold water for about 5 minutes.  Cut the chicken breast into thin slices.  Whisk the eggs in a bowl.  Heat the oil in a large, high pan or wok.

3. Meanwhile make the sauce.  To do this, mix the soy sauce and oyster sauce with the sugar and water.  Fry the sliced ​​chicken breast in the pan for about 2 minutes while stirring, then add the sliced ​​vegetables (carrots and spring onions) and garlic and fry for another 2 minutes.  Add the noodles and mix well with the vegetables.

4. Reduce the heat slightly and stir in the mixed sauce.  Then stir the beaten eggs into the noodles and let them set slightly. Finally add the sprouts.  Refine with pepper or chili powder.  Use soy sauce to season.  Bon appetit!
