Swiss brioche Swiss bread

Swiss brioche is a delightful treat, known for its rich and buttery texture that melts in your mouth. The golden crust of the bread gives way to a soft and fluffy interior, creating a perfect balance of flavors.

The ingredients for the dough:

250g flour
30g sugar
1 teaspoon salt
3 eggs
130 g butter (soft)
1 teaspoon vanilla flavor
10 g fresh yeast (in 2 tablespoons warm water)

In the bowl of the mixer, pour the flour, sugar, salt, eggs, vanilla aroma, baker’s yeast, mix with 2 tablespoons of warm water, begin to knead for 5 minutes, then add the softened butter little by little. little until the dough loosens, then cover and let it rest for 1 hour, after degassing the dough, on a floured work plate form a nice ball, cover again and refrigerate for 2 hours

For the pastry cream:

25cl of milk
2 egg yolks
50 grams of sugar
1 vanilla pod
20g butter
25 g cornstarch

In a saucepan, pour the milk with the vanilla pod, bring to a boil, in a salad bowl, blanch the yolks with the sugar, then add the cornstarch, mix again, then pour the hot milk over the mixture, return to the saucepan.  , stirring to thicken the cream, remove from the heat and then add the softened butter, mix the mixture well and pour into a salad bowl.  Film and refrigerate

Roll out the dough, then add the pastry cream and add the chocolate chips, fold the dough in half and cut, place on a baking tray, cover again and let it rest for 1 hour. 

Then spread your cakes with (egg mixed with 2 tablespoons of milk) preheat the oven to 180 degrees
Bake for 15 to 20 minutes until it has a nice golden color
