No-Bake Strawberry Cheesecake Jars

Creamy, fruity, and perfect for a sweet treat!

Ingredients:

For the Crust:
– 1 cup graham cracker crumbs
– 2 tablespoons granulated sugar
– 4 tablespoons unsalted butter, melted

For the Cheesecake Filling:
– 8 oz cream cheese, softened
– ½ cup powdered sugar
– 1 teaspoon vanilla extract
– ½ cup heavy whipping cream
– ½ cup fresh strawberries, pureed

For the Strawberry Topping:
– 1 cup fresh strawberries, chopped
– ¼ cup granulated sugar
– 1 teaspoon lemon juice

For Decoration:
– Whipped cream
– Sliced fresh strawberries

Instructions:

1. Prepare the Crust:
– In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
– Press a spoonful of the mixture into the bottom of each jar to form the crust layer. Set aside.

2. Make the Cheesecake Filling:
– In a mixing bowl, beat the softened cream cheese until smooth.
– Add the powdered sugar, vanilla extract, and strawberry puree, mixing until fully combined.

3. Whip the Cream:
– In a separate bowl, whip the heavy cream until stiff peaks form.
– Gently fold the whipped cream into the cream cheese mixture until well incorporated.

4. Assemble the Jars:
– Spoon the cheesecake filling over the crust layer in each jar, filling them about 2/3 full.

5. Prepare the Strawberry Topping:
– In a small saucepan, combine the chopped strawberries, granulated sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the strawberries are softened and the mixture is syrupy. Remove from heat and let cool.

6. Top the Cheesecake:
– Once the strawberry topping has cooled, spoon it over the cheesecake filling in each jar.

7. Decorate:
– Top with whipped cream and garnish with sliced fresh strawberries.

8. Chill and Serve:
– Refrigerate the jars for at least 2 hours before serving to allow the flavors to meld.
