INGREDIENTS

400 g tagliatelle
Salt
1 onion
2 tbsp butter
1 tbsp lemon juice
200 ml cream
100 ml vegetable stock
Pepper
2 tbsp fresh parsley, finely chopped (optional)
2 tbsp fresh dill, finely chopped (optional)
400 g salmon fillet without skin
1 tbsp butter

PREPARATION

1. Bring a large pot of water and salt to the boil. Cook the tagliatelle al dente according to the instructions on the packet. Then drain in a sieve and let drain briefly.

2. Peel the onion and dice finely.  Heat 2 tablespoons of butter in a pan and fry the onion cubes over medium heat until translucent.

3. Deglaze the onions with lemon juice, cream and vegetable stock. Let the sauce simmer over low heat for about 5 minutes. Then season with salt and pepper.

4. If desired, add the finely chopped parsley and dill to the sauce and stir well, keeping some herbs for garnish.

5. Meanwhile, cut the salmon fillet into approx. 2 cm cubes. Heat 1 tablespoon of butter in a separate pan and fry the salmon cubes on all sides over medium heat for about 4 minutes, seasoning with salt and pepper.

6. Add the salmon cubes to the sauce and heat the sauce again. Mix the drained tagliatelle with the creamy sauce and the salmon. Arrange the tagliatelle with salmon on plates and serve garnished with the remaining herbs. Enjoy!
