• 1/2 red bell pepper, cut into strips

• 1/4 red onion, finely chopped

• 1/4 cup olives (black or green), sliced

• 1/4 cup crumbled feta cheese

• 2 tablespoons chopped fresh basil (optional, for flavor)

• Salt and pepper to taste

Salad the dressing:

• 3 tablespoons olive oil

• 2 tablespoons of balsamic vinegar

• 1 teaspoon Dijon mustard

• 1 garlic clove, crushed or minced very fine
