Preparation:

  1. Preheat the oven to 180°C (350°F). Grease and flour a cake tin, preferably round, about 20-23 cm in diameter.
  2. In a large bowl, beat the eggs with the sugar until foamy and lighter in color. You can use an electric mixer or do it by hand.
  3. Add the melted butter and mix well until it is completely incorporated into the egg and sugar mixture.
  4. Add the lemon zest and juice, as well as the vanilla essence if you are using. Mix again.
  5. In another bowl, sift the flour, baking powder and pinch of salt. This helps the cake to be fluffier and without flour lumps.
  6. Gradually add the sifted dry ingredients to the wet egg mixture and mix with gentle, enveloping movements. Do not mix excessively to avoid making the cake hard.
  7. Add the milk and continue mixing until the dough is homogeneous and smooth.
  8. Pour the batter into the prepared pan and level the surface with a spatula.
  9. Bake in the preheated oven for approximately 30-40 minutes, or until a toothpick inserted into the center of the cake comes out clean and dry. 10. Once baked, remove the cake from the oven and let it cool in the pan for about 10-15 minutes. Then, unmold the cake and place it on a rack to cool completely. 11. Once the lemon cake is completely cool, you can sprinkle icing sugar on top to decorate, if you wish. Ready!
