Homemade lemon cream

Homemade lemon curd is a delicious and refreshing blend of simple ingredients like freshly squeezed lemon juice, lemon zest, eggs and sugar, simmered until smooth and creamy.  Its balance between sweet and acidic makes it a perfect complement to desserts or cake fillings.  Preparing it at home allows you to customize its intensity of flavor and enjoy a unique citrus touch in each spoonful.

Ingredients:

• 3 lemons (zest and juice)

• 200 grams of sugar

• 100 grams of butter

• 3 eggs

Lemon cream, also known as lemon curd, is delicious and can be used to fill cakes, pastries, cookies or as an accompaniment to desserts.

Preparation:

1. Wash the lemons under hot water to remove any wax or dirt from the skin.  Grate the skin of the lemons to obtain the zest and then squeeze the juice from the lemons.

2. In a heatproof bowl, beat the eggs and sugar until the mixture is well combined.

3. Add the lemon zest and lemon juice to the egg and sugar mixture.  Stir to combine.

4. Place the bowl over a saucepan of boiling water over medium-low heat (bain-marie).  Make sure the bottom of the bowl does not touch the boiling water.

5. Add the butter to the mixture in the bowl.  Stir constantly with a wooden spoon or silicone spatula.  The butter will melt and the mixture will slowly begin to thicken.

6. Continue cooking and stirring constantly until the mixture thickens enough to coat the back of a spoon.  This should take about 10-15 minutes.  Do not let the mixture boil, as the eggs could curdle.

7.  Once the lemon cream has thickened, remove the bowl from the water bath and let the cream cool slightly.

8. Pour the lemon curd into clean, sterilized jars.  Let the jars cool to room temperature before covering and refrigerating.

9. The lemon curd will continue to thicken as it cools in the refrigerator.

Ready!  Now you have a delicious lemon curd that you can enjoy in a variety of ways.  You can use it as a filling for cakes, tartlets, crepes, pancakes or simply spread it on cookies and bread.  Enjoy your homemade lemon curd!
