Chocolate sandwich cookies

Chocolate alfajores are delicious sweets of Latin American origin that consist of two soft cookies filled with a creamy and sweet chocolate filling.  Its texture is tender and its flavor is an irresistible mix of cocoa and sugar, often covered with an additional chocolate coating.  They are an indulgent treat for chocolate lovers around the world.

Ingredients

For the alfajores dough:

• 200 grams of wheat flour

• 30 grams of cocoa powder

• 100 grams of butter (at room temperature)

• 60 grams of icing sugar

• 1 egg yolk

• 1 Teaspoon vanilla extract

• 1 pinch of salt

For the filling and topping:

• Dulce de leche (approximately 200 grams)

• 200 grams of chocolate to melt

• 1 tablespoon vegetable oil (such as coconut oil)

Make sure you have all the ingredients and tools ready before you start, and follow the recipe step by step for delicious chocolate alfajores.

Preparation

1. In a large bowl, mix the wheat flour, cocoa powder and pinch of salt.  Reserve this mixture of dry ingredients.

2. In another bowl, beat the softened butter with the icing sugar until smooth and creamy.  Add the egg yolk and vanilla essence, and continue beating until everything is well combined.

3. Add the dry ingredients (the flour, cocoa and salt mixture) to the butter and sugar mixture.  Mix until the dough has a uniform texture.  Do not knead excessively, just enough so that the ingredients are integrated.

4. Form the dough into a ball, wrap it in plastic wrap and refrigerate it for at least 30 minutes.  This will make handling the dough easier.

5. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).

6. Roll out the dough on a floured surface until it is approximately 5mm thick.  Then, cut out circles with a cookie cutter.

7. Place the dough circles on a baking sheet lined with parchment paper and bake for about 10-12 minutes or until the alfajores are cooked but still tender.  They should not brown too much.

8. Once the alfajores have cooled, spread a generous layer of dulce de leche on the bottom of half of the alfajores and then place another alfajor on top to form a sandwich.

9. For the chocolate coating, melt the chocolate in the microwave or in a double boiler.  Add a tablespoon of vegetable oil to the melted chocolate to make it easier to work with.

10. Dip half of each alfajor in the melted chocolate and place them on a rack so that the excess chocolate drains.

11. Let the chocolate cool and harden before serving your chocolate alfajores.  You can speed up this process by placing them in the refrigerator for a few minutes.
