Buffalo style chicken wings

Buffalo-style chicken wings are a popular dish in American cuisine, known for their spicy and sweet-and-sour flavor thanks to their butter and hot sauce-based sauce.  They are traditionally served with celery and blue cheese dressing, and are ideal for lovers of intense and spicy flavors.  Perfect to accompany sporting events or as an aperitif on any occasion.

Ingredients:

• 20 chicken wings (approximately 1.5 kg)

• 1 cup Buffalo style hot sauce

• 1/2 cup melted butter

• 1 teaspoon white vinegar

• 1 teaspoon garlic powder

• 1 teaspoon cayenne (adjust the amount according to your spiciness preference)

• Salt and pepper to taste

• Cooking oil for frying

• Celery and carrot sticks (optional, to accompany)

Before making Buffalo chicken wings, make sure you have enough hot sauce and melted butter to mix and coat the wings evenly.  Also, keep in mind that proper cooking and breading are key to crispy, delicious wings.

Preparation:

• Wash and dry the chicken wings with kitchen paper.  Then, season them with salt and pepper to taste.

• Preheat your oven to 200°C and place a rack on a baking sheet.  This will help keep the wings crispy as they cook.

• In a large frying pan or deep fryer, heat enough oil to 175°C to fry the wings.  Work in batches to avoid crowding the wings and to ensure they cook evenly.  Fry them for about 10-12 minutes per batch, or until golden and crispy.  Then, place the wings on the rack in the baking sheet to allow any excess fat to drain.

• While the wings are frying, prepare the Buffalo sauce.  In a small saucepan, melt the butter over medium-low heat.  Add the hot sauce, white vinegar, garlic powder and cayenne.  Stir well and simmer for a few minutes until all the ingredients are well mixed.  Taste the sauce and adjust the amount of spiciness according to your preference.

• When all the wings are fried and draining on the baking sheet, brush them generously with the Buffalo sauce.  Make sure to coat each wing well.

• Bake the wings in the preheated oven for about 15-20 minutes, or until they are hot and the sauce has caramelized slightly.

• Serve the Buffalo chicken wings with celery and carrot sticks and additional dipping sauce if desired.  Enjoy your spicy wings!
