Celebration Confetti Cake
A celebration confetti cake is a delightful treat that brings joy to any occasion. Its moist layers are adorned with vibrant sprinkles, creating a festive burst of color with each bite.
Ingredients:
• 2 1/2 cups all-purpose flour
• 2 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 cup unsalted butter, softened
• 1 1/2 cups granulated sugar
• 4 large eggs
• 1 teaspoon vanilla extract
• 1 cup whole milk
• 1/2 cup colorful sprinkles
For the Frosting:
• 2 cups powdered sugar
• 1/2 cup unsalted butter, softened
• 1 teaspoon vanilla extract
• 3 tablespoons heavy cream
Instructions:
• Preheat your oven to 350°F (175°C). Grease and flour 2 9-inch round cake pans.
• In a bowl, whisk together the flour, baking powder, and salt. Set aside.
• In another bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
• Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
• Gently fold in the colorful sprinkles, distributing them evenly throughout the batter.
• Divide the batter equally among the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
• While the cakes are cooling, prepare the frosting. Beat together powdered sugar, butter, vanilla extract, and heavy cream until smooth and fluffy.
• Once the cakes are completely cool, frost between layers and over the top and sides of the cake. Decorate with additional sprinkles.
