Ingredients
6 pork chops
½ kg of ripe tomatoes
4 or 5 chipotle chiles in adobo sauce
½ cup meat broth
2 cloves of garlic
1 small onion
1 pinch of ground oregano
2 tbsp. vegetable oil
½ cup half cream
Salt and pepper to taste
1-Season the chops with salt, pepper and a little oregano.
2-Heat the oil in a large frying pan and fry them over low heat.
3-Check the cooking by making a cut in the thickest part.
4-Remove them and place them in a container to keep them warm. Meanwhile, place the tomatoes, garlic, onion, chilies, broth and cream in the blender; Blend and place the sauce in a small pot, cooking over medium heat for 20 minutes so that the sauce thickens.
5-Adjust the seasoning of the sauce and integrate with the chops.
6-Serve them hot accompanied by potatoes sautéed with butter or the garnish of your choice.
