Tandoori Tofu Tikka Wraps

Tandoori tofu tikka wraps are a delicious and flavorful dish that combines the smoky, spicy taste of tandoori seasoning with the lightness of tofu, all wrapped up in a warm tortilla.

Ingredients:

– 400g firm tofu, pressed and cut into cubes
– 4 large tortilla wraps
– 1 bell pepper, julienned
– 1 red onion, thinly sliced
– Fresh cilantro, chopped, for garnish

For the Tandoori Marinade:

– 1 cup vegan yogurt
– 2 tablespoons tandoori masala
– 1 tablespoon freshly squeezed lemon juice
– 1 teaspoon ginger garlic paste
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1/2 teaspoon turmeric powder
– Salt, to taste

Method:

1. Blend the vegan yogurt with tandoori masala, lemon juice, ginger garlic paste, cumin, coriander, turmeric, and salt to create a smooth, vibrant marinade.

2. Coat the tofu cubes thoroughly in the marinade. For optimal flavor absorption, let the tofu marinate for at least 30 minutes, or overnight in the refrigerator.

3. In a non-stick pan, sear the marinated tofu on medium heat. Rotate the cubes gently for an even char on all sides, approximately 10-12 minutes or until the edges are satisfactorily crisp.

4. Briefly warm the tortillas in the pan until they are pliable and exhibit slight golden patches.

5. Assemble the wraps by spreading the vegetables on each tortilla, followed by a hearty portion of the crispy tandoori tofu. Sprinkle with fresh cilantro for a herbal note.

6. Fold the tortillas securely around the filling, ensuring the edges are tucked in to hold the vibrant mix within.

7. Serve the wraps immediately, accompanied by extra marinade or a tangy vegan chutney for dipping.
