Apple bread
Apple bread with fresh apples is so delicious. You can easily make the juicy cake from the loaf pan yourself. With nuts and cinnamon, the spicy bread is perfect for the cold season.
INGREDIENTS
250 g raisins
4 tbsp rum
750 g apples (e.g. Boskop)
250g sugar
500 g wheat flour (Type 405)
2 tsp cocoa
1½ pack baking powder
125g whole almonds
2 tsp cinnamon
2 tsp neutral cooking oil (e.g. sunflower oil)
Some oil for the mold
PREPARATION
1st step
The day before, cover the raisins in a bowl with hot water, add half of the rum (2 tablespoons) and soak the raisins overnight.
2nd step
The next day, brush a loaf pan (30 cm) with a little oil. Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Peel the apples, quarter them, remove the core and grate or cut the apples into fine strips.
3rd step
Then put the apple rasp with sugar in a bowl, mix well by hand and let stand for about 30 minutes.
4th step
Mix the flour with the cocoa and baking powder and sift into a mixing bowl. Add the almonds and cinnamon. Drain the soaked raisins, add them to the flour mixture along with the apples and stir until smooth. Finally, mix 2 teaspoons of oil and the remaining rum (2 tablespoons) into the dough.
5th step
Pour the dough into the prepared loaf pan and bake the apple bread in the preheated oven for about 40-50 minutes until golden brown. After baking, let the bread cool on a wire rack for about 1 hour and then turn it out. The bread makes approx. 18 slices and will keep in an airtight container at room temperature for at least 4 days.
