Moroccan bread, known as “khobz” or “aysh”, is essential in the country’s diet. It is usually round and flattened, baked in traditional clay ovens. Its dense texture and unique flavor make it a common accompaniment to Moroccan dishes such as tagine and couscous.

Ingredients:

• 500 grams of wheat flour

• 10 grams of dry yeast or 25 grams of fresh yeast

• 1 teaspoon salt

• 1 teaspoon of sugar

• 250 ml of warm water

• Olive oil (for brushing)

Before starting to make Moroccan bread, it is important to verify that you have all the necessary ingredients. The preparation of this bread involves carefully following each step of the recipe, thus guaranteeing the obtaining of an exquisite Moroccan bread.

Preparation:

  1. In a large bowl, mix the flour, salt and sugar.
  2. If you are using dry yeast, add it to the dry flour. If you are using fresh yeast, dissolve it in a little warm water and a pinch of sugar until it bubbles. Then add it to the flour mixture.
  3. Add the warm water gradually and begin to knead the ingredients until you obtain a soft and elastic dough. You may need to adjust the amount of water or flour depending on the consistency of the dough.
  4. Cover the bowl with a clean, damp cloth and let the dough rest in a warm place for about 1-2 hours, or until it has doubled in size.
  5. Once the dough has risen in size, preheat your oven to 220 degrees Celsius (425 degrees Fahrenheit).
  6. Divide the dough into small fist-sized balls. Then, flatten each ball to form circles about 1-2 cm thick.
  7. Place the dough circles on a baking sheet that has been previously greased or covered with parchment paper.
  8. Using a fork, poke a few holes in the top of each dough circle.
  9. Bake in the preheated oven for approximately 10-15 minutes, or until the bread is golden brown on top.
  10. Once the Moroccan bread is ready, take it out of the oven and brush the surface with a little olive oil to give it shine and softness.
