Cookie Monster Cake

This Cookie Monster cake is perfect for birthdays. The cake bases are filled with fruity blueberry compote.  Decorated with blue buttercream and cookies, your cake will be so beautiful! 

INGREDIENTS

FOR THE DOUGH

250g butter
250g sugar
6 eggs (size M)
3 organic lemons
250 g wheat flour (Type 405)
75 g cornstarch
3 tsp baking powder
70 ml cream
A little grease for the shapes
Some flour for the molds

FOR THE FILLING

250 g fresh blueberries
80g sugar
50ml water

FOR THE BUTTERCREAM

250 g soft butter
500g powdered sugar
Some blue fat-soluble food coloring

FOR DECORATION

3 cookies
40g white fondant
10g black fondant

PREPARATION

1st step
Preheat the oven to 180 degrees top/bottom heat.  Grease two springform pans (Ø 20 cm) and dust them with flour.  To make the dough, mix the soft butter together with half of the sugar (125 g) until creamy.

2nd step
Separate the eggs, gradually add the egg yolks to the butter mixture and mix well.  Place the egg whites in a mixing bowl and beat together with the other half of the sugar (125 g) to form a stable snow.  Wash the lemons with hot water, pat dry and rub off the peel.  Add the lemon zest to the butter mixture.

3rd step
Mix the dry ingredients in a bowl and sift into the dough, stir in carefully, then mix in the cream.  Finally, fold in the egg whites by hand and distribute the dough evenly between both molds and smooth it out.  Bake the bases in the preheated oven for about 35-40 minutes.
