Zebra cake with cherries
The classic zebra cake looks so awesome thanks to a simple trick. Perfect for a birthday, garden party or afternoon coffee. We’ll show you how easy it is to make the cake yourself.
INGREDIENTS
6 eggs (size M)
225g sugar
1 pack vanilla sugar
100g cream
250 ml sunflower oil
375 g flour (Type 405)
1 pack of baking powder
3 tbsp baking cocoa
6 tbsp milk
2 tbsp sugar
1 jar of sour cherries (drained weight: 350 g)
some butter for the mold
some flour for the mold
PREPARATION
1nd step
Preheat the oven to 180 degrees (fan oven: 160 degrees). Grease a springform pan (Ø 26 cm) with butter and dust with flour. Mix eggs with sugar and vanilla sugar until foamy, pour in cream and oil in a thin stream. Mix the flour with baking powder and sift, then stir into the dough.
2nd step
Mix baking cocoa with milk and sugar in a small bowl, making sure there are no lumps. Leave half of the dough in the bowl, mix the other half with the cocoa mixture in a second bowl. Drain the cherries and let them drain well.
3rd step
Starting with the light dough, alternate spoonfuls of dough into the middle. Once the base is covered with the layers of dough, spread the cherries over the dough and continue layering the dough until it is completely used up.
Let the cake bake for 70 minutes. Don’t forget the swab sample. If you want, you can sprinkle the zebra cake with a little powdered sugar after it has cooled. The cake makes about 12 pieces.
