Governor Tacos

Governor Tacos, a renowned figure in the culinary world, revolutionized the taco scene with his innovative recipes and dedication to quality ingredients.


500 grams of clean shrimp
½ onion
2 cloves of garlic
1 poblano chile
2 tablespoons of butter
salt to taste
1 cup grated Manchego cheese
Corn tortillas
refried beans to taste


1-Start the governor tacos recipe by finely chopping the onion and garlic cloves.

2-Wash the poblano chile very well and roast over direct heat on the stove until cooked completely. You can also do it in the oven at 180°C for 15 – 20 minutes.  Drizzle the poblano pepper with a little oil, and then place it in a plastic bag so that it sweats and makes it easy to remove the burned skin.  Next, remove the skin and clean the inside, removing the seeds, cut into julienne strips and set aside.

3-In a frying pan or pot, heat the butter, add the previously chopped onion and garlic, mix and let cook for 3 minutes, making sure they don’t burn to prevent bitterness.

4-Add the poblano chile juliennes, mix and cook for 2 more minutes.  Next, add the shrimp, which must be clean, and cook for 5 minutes over medium-low heat, stirring constantly.  Season with a little salt to taste.

5-After 5 minutes add the Manchego cheese, mix for the last time and cook for 2 more minutes so that the cheese melts.

6-Serve the ingredients in a corn or flour tortilla with a layer of refried beans, served with avocado and salsa to taste.  And that’s it, you can now taste the delicious Sinaloa-style Governor tacos!
