Canned garlic is cloves of garlic soaked in vinegar, oil, or a mixture of both to prolong its shelf life. This preservation method enhances their flavor and gives them a softer texture. Canned garlic is versatile in the kitchen, providing a pleasant and aromatic touch to various culinary preparations.
Ingredients:
• 1 cup peeled garlic cloves
• 1 cup white wine vinegar
• 1 cup of water
• 1 tablespoon of salt
• 1 teaspoon black peppercorns
• 1 teaspoon red pepper flakes (optional, for a spicy touch)
• Fresh herbs such as thyme or rosemary (optional, for additional flavor)
• Glass jars with airtight lids
When preparing canned garlic, be sure to use fresh, quality garlic for best results. Also, properly sterilize the jars and use high-quality vinegar to enhance the flavor.
Preparation:
- Sterilize the jars and lids by soaking them in boiling water for 10 minutes. Then let them air dry.
- In a saucepan, mix the vinegar, water and salt. Bring the mixture to a boil.
- Add the peeled garlic cloves to the vinegar mixture and cook over low heat for about 5 minutes. This will help make the garlic softer.
- Add the black peppercorns, red pepper flakes, and fresh herbs (if using). Cook for another 2-3 minutes.
- Remove the mixture from the heat and let it cool slightly.
- Place the garlic cloves and vinegar mixture into the sterilized jars, making sure to distribute the ingredients evenly.
- Make sure the garlic is submerged in the vinegar mixture. If necessary, add more vinegar.
