1 carrot
50 g celeriac
3 cloves of garlic
1 yellow pepper
1 red pepper
2 large potatoes
4 tbsp sunflower oil

1 tsp salt
¼ tsp ground black pepper
50 g tomato paste
100 ml water
400 g canned tomato pieces
300 ml vegetable broth
1 bay leaf
1 tsp dried herbs de Provence

1. For the farmer’s pot with minced meat, peel or remove the peel from the onions, carrot and piece of celery and cut into fine cubes.  Peel the garlic and chop roughly.  Wash the peppers, quarter them, remove the seeds and cut them into coarse pieces.  Peel the potatoes and cut them into 2 x 2 cm cubes.

2. Fry the pepper pieces together with the onions and garlic in a pot in sunflower oil for about 3 minutes until golden.  Add the meat and fry for about 5 more minutes.  Meanwhile, season with salt and pepper.

3. Now add tomato paste and roast over high heat for about 1 minute.  Then deglaze with water.  Add the tomato pieces and fill with the vegetable broth.

4. Add the potato, carrot and celery cubes with the bay leaf and let the pot simmer with the lid closed for about 40 minutes.  Just before serving, season with the dried herbs and salt and pepper.  Bon appetit!
