Juicy lemon cake 😲✨🍋

200 g soft butter
150g sugar
2 tbsp lemon juice
4 eggs (size M)
250 g flour
1 pack of baking powder
1 tsp lemon zest
some butter for the mold


1 medium lemon (juice of it)
300g powdered sugar


1st step
Preheat the oven to 180 degrees (fan oven: 160 degrees).  Grease the loaf tin (length 25 cm) well.  Rinse the silicone mold with cold water, do not dry it.  Briefly mix butter, sugar and lemon juice.  Gradually stir in eggs.

2nd step
Mix together the flour, baking powder and lemon zest.  Mix with the butter-sugar mixture.  Cake in the preheated oven approx. 

Bake for 45 minutes.  After about 30 minutes, cover the cake with some aluminum foil so that it doesn’t get too dark.  Take the cake out of the oven and let it cool for about 10 minutes!

3rd step
For the glaze, mix lemon juice and powdered sugar together so that the icing is thick (if it is too runny, simply add more powdered sugar).

Our insider tip: Carefully prick the still warm cake several times with a fork.  Pour the icing over it. 

This makes the cake even juicier!  The cake makes about 12 pieces. 

If you make the cake in a normal loaf tin, pierce the cake while it is still in the tin and pour some lemon juice over it. 

Allow the cake to cool, remove it from the mold and then pour icing over it.  Allow the cast to solidify.
