Date cake with spice

Date cake with spice 🍫

Date cake with walnuts, cinnamon, nutmeg and allspice is sweet and spicy and so delicious.

INGREDIENTS

FOR THE DOUGH

200 g dried dates (pitted)
200 ml boiling water
150g walnuts
220 g wheat flour (Type 405)
100g sugar
50 g ground almonds
3 tsp baking powder
1 tbsp baking cocoa
1 tsp ground cinnamon
2 pinches of nutmeg
2 pinches of allspice
1 pinch of salt
70 g soft butter
3 eggs (size M)

FOR DECORATION

2 tbsp apricot jam
2 – 3 tbsp coarsely chopped pistachios

PREPARATION

1st step
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees).  To make the dough, place the dates in a bowl and pour the boiling water over them. 

Let it steep for about 15 minutes.  Roughly chop the walnuts.

2nd step
Meanwhile, mix the flour with sugar, almonds, baking powder, cocoa, cinnamon, nutmeg, allspice and salt in a bowl. 

Grease and flour a loaf pan (25 x 11 cm), alternatively rinse a silicone mold with cold water.

3rd step
Pour the soaked dates and their liquid into a mixing bowl.  Puree into puree using a hand blender or food processor. 

Add the date paste with the soft butter and eggs to the flour mix.  Beat with the whisk of the hand mixer for about 2 minutes.  Stir in chopped walnuts.

4th step
Pour the dough into the mold, smooth it out and bake in the lower third of the preheated oven for about 20 minutes. 

Cut the cake in the middle with a knife so that it breaks open nicely when baking.  Bake for another 35 minutes.  Let cool down.

5th step
Carefully turn the cake out of the tin.  To garnish, bring the apricot jam to the boil in a pot. 

Brush the surface of the cake with it and sprinkle with pistachios if desired.  The date cake makes approx. 14 pieces.

Our tip: Good to prepare!
You can bake the date cake in advance.  If you leave it in an airtight container for 1-2 days, the spices will penetrate the dough even better.  This makes the cake taste even more aromatic.
