Rice salad with tuna

Rice salad with tuna

Mmmhh, our rice salad with tuna, corn and peppers is always a good idea! The recipe is very simple and incredibly delicious – whether for grilling, as dinner or as a side dish.

INGREDIENTS

400 g parboiled rice

½ bunch of spring onions

100 g canned corn kernels

1 red pepper

200 g tuna in oil

100 g mayonnaise

1 tbsp lemon juice

3 tbsp white wine vinegar

1 tsp salt

½ tsp ground pepper

½ bunch of parsley

PREPARATION

1. Heat a large pot of water. When the water is bubbling, add the salt first, then the rice and cook according to the instructions on the packet. Drain the rice and rinse with cold water. Drain the rice well.  Meanwhile, wash the spring onions, clean them and cut them into thin slices.

2. Drain and rinse the corn kernels. Wash the peppers, quarter them and remove the core. Cut the peppers into small pieces. Take the tuna out of the can and break it up on a plate with a fork. In a bowl, mix the mayonnaise with the lemon juice and the white wine vinegar.

3. Then mix the sauce with the salt and pepper. Put the rice, vegetables (spring onions, corn and peppers) and tuna in the bowl and mix well with the sauce. Wash the parsley, drain it and pluck the leaves from the stalk. Finely chop the parsley leaves and sprinkle the salad with the chopped parsley. Enjoy!
