Classic Caesar Salad

Classic Caesar Salad: We love this quick and easy recipe for the salad with the creamy, spicy sauce! A salad that fills you up!

INGREDIENTS

FOR THE DRESSING

1 clove of garlic

1 organic lemon

1 jar of capers (drained weight approx. 30 g)

½ jar of anchovy fillets in oil (drained weight approx. 25 g)

120 g mayonnaise

2 tsp medium-hot mustard

50 g grated Parmesan (37% fat in dry matter)

1 pinch of salt

1 pinch of cayenne pepper

FOR THE CROUTONS

a few sprigs of rosemary

a few sprigs of thyme

1 ciabatta (300 g)

80 ml olive oil

1 pinch of salt

FOR THE SALAD

4 romaine lettuce hearts (approx. 800 g)

100 g shaved Parmesan (37% fat in dry matter)

PREPARATION

1. Peel and press the garlic.  Wash the lemon with hot water, pat dry, finely grate the peel and squeeze out the juice. Drain the capers and anchovy fillets, collecting the liquid and oil. Finely chop the capers and anchovies.

2. Mix the mayonnaise with mustard, garlic, caper water, anchovy oil and 1 teaspoon of lemon zest until smooth. Stir in the chopped capers, anchovies and Parmesan and season with salt, cayenne pepper and lemon juice.

3. Wash the rosemary and thyme and drain. Cut the ciabatta into 2 cm cubes. Heat the olive oil in a pan, add the ciabatta cubes and herb sprigs and brown in a pan over medium heat for 3-4 minutes, stirring occasionally. Remove the herb sprigs, salt the croutons and set aside.

4. Wash the lettuce, drain and clean, tear the leaves into bite-sized pieces and set aside.  Mix the salad with the dressing in a large bowl and serve sprinkled with croutons and shaved parmesan. Enjoy!
