Jam cookies

Jam cookies

Jam cookies are delicious cookies filled with fruit jam that provide a perfect balance between sweet and crunchy.  They are a classic baking favorite and can be enjoyed in a variety of jam flavors, such as strawberry, raspberry or apricot, satisfying the cravings of those looking for a sweet, fruity bite.  Perfect to accompany tea or as a snack at any time of the day.

Ingredients:

• 1 cup (2 sticks) butter at room temperature

• 1/2 cup granulated sugar

• 2 egg yolks

• 2 teaspoons vanilla extract

• 2 1/2 cups of wheat flour

• 1/2 teaspoon salt

• Jam of your choice (raspberry, strawberry, etc.)

Make sure you preheat the oven to the temperature indicated in the recipe and have all the ingredients on hand before you start making the jam cookies.

Preparation:

1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper or baking silicone.

2. In a large bowl, beat the butter and sugar until the mixture is light and creamy.

3. Add the egg yolks and vanilla extract, and continue beating until well incorporated.

4. In another bowl, mix the flour and salt.

5. Gradually add the flour and salt mixture to the butter and sugar mixture, beating on low speed or stirring with a wooden spoon until the dough comes together and all the ingredients are combined.  Do not overmix.

6. Form small balls of dough, about the size of a walnut, and place them on the prepared baking sheet, leaving space between each one.

7. Use your finger or the back of a spoon to make a small well in the center of each cookie.

8. Fill each hole with a small amount of jam of your choice.  Do not fill them too much, as the jam may spread during cooking.

9. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.

10. Remove the cookies from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

Ready!  Now you have some delicious cookies filled with jam.  Enjoy them with a cup of tea or coffee.
