Cod in the oven

The cod cooked in the oven is a brilliant recipe that you will love! The fish is prepared with vegetables and everything comes out of the oven quickly.

INGREDIENTS

400 g cod fillet
a little salt
a little pepper
1 medium-sized zucchini
1 red pepper
1 yellow pepper
8 cherry tomatoes
1 clove of garlic
6 tbsp olive oil
1 organic lemon
1 tsp dried oregano

PREPARATION

1. For the cod from the oven, cut the cod fillet into equal-sized pieces (2 pieces per person) and season all over with salt and pepper. Wash the zucchini, halve lengthways and cut into slices (approx. 0.5 cm thick). Wash both peppers, quarter them and remove the core. Cut into 2 x 2 cm pieces. Wash and halve the cherry tomatoes.

2. Peel the garlic clove and press it finely. Mix the olive oil with the garlic clove. Wash the lemon, finely grate the peel and mix with the garlic and olive oil.

3. Fry the vegetables in a pan with olive oil for about 2 minutes at high heat, stirring constantly. Season with salt, pepper and oregano and place in a casserole dish. Preheat the oven to 185 degrees circulating air (200 degrees top and bottom heat).

4. Place the fish on the vegetables. Drizzle the vegetables and fish with the prepared garlic-lemon oil and place in the preheated oven. Cook for 8 minutes. Enjoy!
