INGREDIENTS
FOR THE CHOCOLATE DOUGH
6 eggs (size M)
250 g sugar
1 packet of vanilla sugar
1 pinch of salt
100 g ground almonds
280 g flour
4 tbsp baking cocoa
3 tsp baking powder
130 ml cooking oil
150 ml mineral water
ALSO
350 g apricot jam
100 g whipped cream
250 g dark chocolate coating
400 g colored chocolate chips
PREPARATION
1st step
Line the springform pan base (Ø 20 cm) with baking paper so that the pan can be used again immediately after baking. Preheat the oven to 180 degrees (fan oven: 160 degrees).
2nd step
Beat the eggs, sugar, vanilla sugar and salt for 2 minutes until frothy. Mix the almonds, flour, baking powder and cocoa and add to the dough alternately with oil and water. Pour half of the dough into the tin and bake for 35 minutes.
Step 3
After baking, let the cake cool for 5 minutes, then remove it from the tin and slide it onto a cake rack using the baking paper. Line the tin with baking paper again and pour in the remaining dough. Bake for another 35 minutes and let it cool completely.
Our tip
Light birthday cake
If you prefer to make a light cake, you can simply replace the cocoa with 2 tablespoons of flour and add another packet of vanilla pudding powder to the dough.
Step 4
Boil the jam in a saucepan. Halve both cakes horizontally to create a total of 4 layers. Put one layer aside as a lid. Cut a hole Ø 7 cm in the middle of each of the remaining three layers. Place a layer with a hole on the desired cake plate. Spread 3-4 tablespoons of jam on top, always leaving out the hole.
