Coffee cookies
Coffee cookies are addictive.With our recipe you can easily prepare these delicious mocha cookies.
INGREDIENTS (For 40 pieces)
FOR THE DOUGH
120 g wheat flour (type 405)
50 g powdered sugar
20 g baking cocoa (approx. 3 tbsp)
1 tbsp cornstarch (alternatively: 1 tbsp vanilla or chocolate pudding powder)
2 tsp instant coffee or instant espresso powder
130 g cold butter
ALSO
100 g dark chocolate coating
1 tsp neutral cooking oil (e.g. sunflower oil)
Chocolate mocha beans for garnishing as desired
PREPARATION
Step 1
For the dough, mix the flour, powdered sugar, cocoa, starch and instant coffee powder in a mixing bowl. Add the cold butter in pieces and knead with your hands or the dough hook of a hand mixer to form a smooth dough. Flatten the dough, put it in a food storage container and chill for 30 minutes.
Step 2
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Line a baking tray with baking paper. Take the dough out of the fridge and cut it into about 40 equal-sized pieces. Shape each piece into a ball. Press a hollow into the middle of each ball using a fork handle or wooden spoon handle.
Step 3
Bake the cookies in the preheated oven for about 12-14 minutes. Then let them cool completely. Finely chop the chocolate coating and melt it completely in a bowl over a hot water bath. Remove the chocolate from the water bath, stir in the oil.
Step 4
Pour about 1 teaspoon of the chocolate coating into the hollows of the chocolate espresso cookies. If you like, place chocolate mocha beans on the cookies just before the chocolate coating sets. Store cookies in an airtight container or cookie tin. This way, the espresso chocolate cookies will last for at least 3 weeks.
