Dulce de Leche Cheesecake


1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
1 cup sour cream
1 cup dulce de leche
4 large eggs
1 teaspoon vanilla extract
1/4 teaspoon salt

Step by Step

Preheat oven to 325°F (160°C).  Grease a 9-inch skillet.
In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. 

Press the mixture firmly into the bottom of the prepared pan.
In a large bowl, beat cream cheese until smooth.  Add 1 cup sugar and sour cream, beating until combined.

Mix in dulce de leche, eggs, vanilla extract, and salt until smooth and well combined.
Pour batter over the crust in the springform pan.

Bake in preheated oven for 55-60 minutes, or until center is set and edges are lightly brown.
Remove from the oven and let the pan cool on a wire rack for 1 hour. 

Refrigerate for at least 4 hours or overnight before serving.
