Vanilla Custard Squares

Ingredients

• 2 cups graham cracker crumbs
• 1/2 cup unsalted butter, melted
• 1/4 cup granulated sugar
• 2 cups whole milk
• 1/2 cup heavy cream
• 1 cup granulated sugar
• 1/2 cup all-purpose flour
• 4 large egg yolks
• 2 teaspoons vanilla extract
• Powdered sugar, for dusting

Instructions

1. Preheat oven to 350°F (175°C). Line a 9×9-inch pan with parchment paper.
2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar.  Press the mixture into the bottom of the pan and bake for 10 minutes. Let cool.
3. Heat the milk and cream in a saucepan over medium heat until simmering.
4. Mix the sugar and flour in a bowl. Add the egg yolks and whisk until smooth.
5. Slowly pour the hot milk mixture into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat until thickened and boiling.
6. Remove from heat and stir in the vanilla extract.
7. Pour the custard over the cooled crust and spread evenly. Refrigerate for at least 4 hours.
8. Cut into squares and sprinkle with powdered sugar before serving.

Total time: 35 minutes + cooling
Servings: 12 squares
