Ingredients
For the Base:
200g (about 7 oz) digestive biscuits (or graham crackers)
100g (about 3.5 oz) unsalted butter, melted
2 tablespoons cocoa powder
For the Mint Filling:
250g (about 9 oz) cream cheese, softened
200g (about 7 oz) powdered sugar
1 teaspoon peppermint extract
A few drops of green food coloring (optional, for color)
100g (about 3.5 oz) white chocolate, melted and cooled
For the Chocolate Topping:
200g (about 7 oz) dark or milk chocolate, chopped
50g (about 1.75 oz) unsalted butter

Instructions
Prepare the Base:
In a food processor or using a rolling pin, crush the digestive biscuits into fine crumbs.
In a mixing bowl, combine the biscuit crumbs, melted butter, and cocoa powder. Mix until well combined and the mixture resembles wet sand.
Press the mixture firmly into the bottom of a lined 8×8-inch square baking tin. Use the back of a spoon or a flat object to compact it evenly. Chill in the refrigerator while preparing the filling.
Make the Mint Filling:
In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
Stir in the peppermint extract and a few drops of green food coloring (if using) until the desired color is achieved.
Fold in the cooled melted white chocolate until fully incorporated.
Spread the mint filling evenly over the chilled base, smoothing the top with a spatula. Return the slice to the refrigerator and chill for at least 2 hours, or until firm.
Add the Chocolate Topping:
In a heatproof bowl set over a pot of simmering water (double boiler method), melt the chopped chocolate and butter together, stirring occasionally, until smooth. Alternatively, microwave in 30-second intervals, stirring between each interval.
Once smooth, pour the chocolate mixture over the chilled mint layer. Use a spatula to spread it evenly, ensuring the entire surface is covered.
