Vanilla Ice Cream Cookie
Vanilla Ice Cream Cookie Cake
Ingredients:
• 500g chocolate chip cookies
• 1/4 cup melted margarine
• 1 cup semisweet baking chocolate, melted and warm
• 2 liters vanilla ice cream
• 1 cup whipped cream
• 12 cherries in syrup

Preparation:
1. Cookie crust:
• Grind half of the cookies and mix them with the melted margarine until a paste forms.
• Place this paste in the bottom of a 9-inch (23 cm) springform pan.
• Place the remaining cookies, upright, around the edge of the pan.
• Pour 3/4 cup of melted chocolate over the cookie crust.
• Freeze for 15 minutes.
2. First Ice Cream Layer:
• Scoop out 1 liter of vanilla ice cream and let it soften at room temperature or in the microwave for a few seconds (without melting it).
• Once the crust is frozen, place the softened ice cream on top of the chocolate layer.
• Freeze for 30 minutes.
3. Ice Cream Scoops:
• Roll the remaining vanilla ice cream into scoops and place them on top of the ice cream layer.
• Freeze until firm, about 4 hours or overnight.
4. Decoration:
• Carefully unmold.
• Garnish with the remaining melted chocolate, whipped cream, and cherries in syrup.
