Ice Cream Chocolate Fruit Cake
Ingredients
For the cake layers
2 cups all-purpose flour
1 cup sugar
4 eggs
1 cup milk
1/2 cup vegetable oil
2 tsp baking powder
1 tsp vanilla extract
For the filling
Strawberry ice cream
Chocolate ice cream
Vanilla ice cream
Fresh strawberries (sliced)
Mango cubes
For the chocolate ganache
300 g dark chocolate
200 ml heavy cream
For decoration
1 scoop each of chocolate, strawberry, and vanilla ice cream
Fresh strawberries
Mango cubes
Chocolate chips

Instructions
1. Make the cake layers
1. Preheat oven to 180°C (350°F).
2. In a bowl, whisk eggs, sugar, oil, milk, and vanilla.
3. Add flour and baking powder. Mix until smooth.
4. Pour batter into two cake pans and bake for 25–30 minutes.
5. Let the cakes cool completely.
2. Prepare the filling
1. Place one cake layer on a plate.
2. Spread a layer of vanilla ice cream and add mango cubes. Freeze 15 minutes.
3. Add a layer of chocolate ice cream. Freeze 15 minutes.
4. Add a layer of strawberry ice cream and place strawberries inside. Freeze again until firm.
5. Place the second cake layer on top. Freeze for 1 hour.
3. Make the chocolate ganache
1. Heat cream until hot (not boiling).
2. Pour over chopped chocolate. Let sit 1 minute.
3. Stir until smooth and shiny.
4. Let it cool slightly.
4. Cover the cake
1. Remove cake from freezer.
2. Pour ganache over the cake until completely covered.
3. Decorate the sides with chocolate chips.
5. Final decoration
On top of the cake, add:
1 scoop chocolate ice cream
1 scoop strawberry ice cream
1 scoop vanilla ice cream
Fresh strawberries
Mango cubes
A few chocolate chips
Freeze again for 15 minutes before serving.
