Pork ribs in pressure cooker

Pressure cooked pork ribs turn out irresistibly tender and juicy as the cooker speeds up the cooking process.  Seasoning them with spices and topping them with a delicious sauce makes for a tasty dish in no time.  The pressure cooker brings out the flavors, making ribs a quick and delicious option for any occasion.

Ingredients:

• 2 to 3 pounds (approximately 1 to 1.5 kg) pork ribs

• 1 tablespoon cooking oil

• 1 chopped onion

• 3 cloves of garlic, minced

• 1 cup barbecue sauce

• 1/2 cup chicken broth

• 2 tablespoons apple cider vinegar

• 2 tablespoons of brown sugar

• 1 teaspoon Dijon mustard

• 1 teaspoon Worcestershire sauce

• Salt and pepper to taste

Season the ribs with your favorite spices and let them rest for about 30 minutes to enhance the flavor.  Then, pressure cook with liquid (broth, wine or sauce) for 25-30 minutes for tender, flavorful ribs.

Preparation:

1. Wash the ribs and dry them with kitchen paper.

2. Season the ribs with salt and pepper to taste.

3. Heat the pressure cooker on “saute” or “brown” mode and add a tablespoon of oil.

4. Sear the ribs on all sides until well browned.  Remove them from the pot and set them aside.

5. In the same pot, add the chopped onion and garlic.  Sauté them until they are tender.

6. Add the barbecue sauce, chicken broth, apple cider vinegar, brown sugar, Dijon mustard, and Worcestershire sauce to the pot.  Stir the mixture well.

7. Place the browned ribs back in the pot, dipping them into the sauce.

8. Close the pressure cooker lid and cook on high pressure for about 25-30 minutes, or according to the instructions on your pork rib cooker.

9. Release pressure from the cooker according to your model’s instructions.

10. Open the lid and check the tenderness of the ribs.  If necessary, cook for a few additional minutes.

11. Serve the ribs with the sauce on top and enjoy.
