PORK RIBS IN RED SAUCE
Pork ribs in red sauce are a delicious and comforting dish that combines the juiciness of ribs with a rich, slightly spicy sauce. To prepare this delicacy, first the ribs are browned in a pan to highlight their flavor, then they are immersed in a red sauce made with tomatoes, chili peppers, onions and spices.
Ingredients:
700 g pork ribs
5 tablespoons of oil
4 tomatoes, cooked
¼ onion
2 cloves of garlic
3 ancho chiles, seeded and soaked in hot water
1 tablespoon chicken broth, powdered
Preparation:
In a saucepan, cook the ribs with water until covered, a piece of onion and salt. Cook over medium heat for 40 minutes or until well cooked, remove from heat and drain.
In a frying pan, heat 3 tablespoons of oil, fry the ribs until lightly browned: set aside.
For the sauce, blend the tomatoes with the onion, garlic, ancho chiles, a little of the water in which you soaked them and the chicken broth until completely integrated.
In a saucepan, heat the rest of the oil, fry the sauce until it comes to a boil and add the ribs.
