Classic Caesar Salad

Classic Caesar Salad: We love this quick and easy salad recipe with the creamy, spicy sauce!  A salad that fills you up!

INGREDIENTS

FOR THE DRESSING

1 clove garlic
1 organic lemon
1 jar of capers (drained weight approx. 30 g)
½ glass of anchovy fillet in oil (drained weight approx. 25 g)
120g mayonnaise
2 tsp medium hot mustard
50 g grated Parmesan (37% fat in dry matter)
1 pinch of salt
1 pinch of cayenne pepper

FOR THE CROUTONS

a few sprigs of rosemary
a few sprigs of thyme
1 ciabatta (300 g)
80 ml olive oil
1 pinch of salt

FOR THE SALAD

4 romaine lettuce hearts (approx. 800 g)
100 g grated Parmesan (37% fat in dry matter)

PREPARATION

1. Peel and press the garlic.  Wash the lemon with hot water, pat dry, grate the peel finely and squeeze out the juice.  Drain the capers and anchovy fillets, reserving the liquid and oil.  Finely chop the capers with the anchovies.

2. Mix mayonnaise with mustard, garlic, caper water, anchovy oil and 1 teaspoon of lemon zest until smooth.  Stir in the chopped capers, anchovies and Parmesan and season with salt, cayenne pepper and lemon juice.

3. Wash and drain the rosemary and thyme.  Cut the ciabatta into 2 cm cubes.  Heat olive oil in a pan, add ciabatta cubes and herb sprigs and brown in a pan over medium heat, stirring occasionally, for 3-4 minutes.  Remove herb sprigs, salt the croutons and set aside.

4. Wash the lettuce, drain it, clean it, tear the leaves into bite-sized pieces and set aside.  Mix the salad with the dressing in a large bowl and serve sprinkled with croutons and grated Parmesan.  Bon appetit!
