INGREDIENTS
2 onions
2 cloves of garlic
400 g minced beef
1 egg (size M)
50 g breadcrumbs
2 tsp medium hot mustard
2 tsp tomato paste (double concentrated)
Salt
1 tsp paprika powder (hot)
freshly ground pepper
3 tbsp sunflower oil
½ tsp chili flakes
2 cans chopped tomatoes (400 g each)
½ bunch of parsley (15 g)
PREPARATION
1. Peel off the onions and garlic. Finely dice onions and chop garlic. Put the minced meat, egg and breadcrumbs in a bowl and mix with mustard, tomato paste and half each of the onion and garlic cubes.
2. Season with salt, paprika powder and pepper and knead vigorously for about 3 minutes. Form portions into small meatballs (see portion information above). It’s best to do a small cooking test in the pan or microwave to taste the mixture.
3. Fry the meatballs in a pan in 2 tablespoons of oil over high heat for 3-4 minutes. Remove meatballs from pan and set aside.
4. Sauté the remaining onions and garlic in the pan in the remaining oil for 2-3 minutes.
Add chili flakes, sweat for 1 minute, deglaze with chopped tomatoes and simmer for about 5 minutes.
In the meantime, wash and drain the parsley, pick off the leaves and chop.
5. Add the minced meat balls and half of the parsley to the sauce and continue cooking for about 10 minutes.
Season with salt and pepper, sprinkle with the remaining parsley and serve with baguette, rice or pasta if desired. Bon appetit
