INGREDIENTS

FOR THE DOUGH

250 g soft butter
220g sugar
1 pack vanilla sugar
5 eggs (size M)
300 g wheat flour (Type 405)
25 g cornstarch
½ pack of baking powder
4 tbsp cream
60 g baking cocoa
4 tablespoons of milk
1 tablespoon of sugar
A little grease for the shapes
Some flour for the molds

FOR FROSTING

125 g dark chocolate couverture
125g cream
80g soft butter
100g powdered sugar

PREPARATION

1st step
Grease three springform pans (Ø 16 cm) and dust them with a little flour.  To make the dough, beat soft butter, sugar and vanilla sugar in a mixing bowl until creamy, then stir in the eggs one at a time.

Mix the flour with starch and baking powder in a bowl, sift into the dough and stir everything well.

Finally, briefly stir in the cream.

2nd step
Preheat the oven to 180 degrees top/bottom heat.  Sift the baking cocoa into a small bowl and mix it with milk and 1 tablespoon of sugar to form a paste.

Divide half of the light dough between the three prepared molds, then mix the remaining dough with the chocolate paste and also distribute the chocolate dough evenly among the molds.

Marble the cake batter with a fork.

3rd step
Bake the three springform pans in the preheated oven for about 35 minutes, then let them cool on a wire rack after baking.

Then remove the cake bases from the edge with a knife, turn them out of the mold and cut them straight with a large serrated knife.
