Tortellini salad
This colorful tortellini salad with ham, cheese and crunchy vegetables is prepared in no time and is so easy! The recipe with creamy mayonnaise-garlic dressing is a hit at the next barbecue party!
INGREDIENTS
800 g tortellini with cheese filling (from the refrigerated section)
Salt
1 tbsp rapeseed oil
4 spring onions
a few sprigs of parsley
150 g cherry tomatoes
½ cucumber
½ red pepper
½ yellow pepper
4 slices of cooked ham (4 slices = approx. 120 g)
3 slices of Gouda (48% fat in dry matter)
1 clove of garlic
2 tbsp mayonnaise
3 tbsp sour cream
1 tbsp lemon juice
freshly ground pepper
PREPARATION
1. For the tortellini salad, cook the cheese tortellini in salted water according to the instructions on the packet, drain, rinse and mix with rapeseed oil. Wash the vegetables and parsley and allow to drain. Clean the spring onions and cut into fine rings. Pick off the parsley leaves and cut into strips. Halve the cherry tomatoes, peel and dice the cucumber. Halve the peppers, remove the seeds and cut into strips.
2. Roughly dice the ham and cut the cheese into thin strips. Peel the garlic and grate finely. Mix the mayonnaise with sour cream, garlic and lemon juice until smooth and season with salt and pepper.
3. Mix the tortellini with the vegetables and the ham strips, marinate with the salad dressing and serve sprinkled with parsley and cheese. Enjoy!
