Apple Nut muffin

Apple Nut muffin

Apple nut muffins are so moist. The dough with ground hazelnuts, apple and cinnamon is prepared in no time.  The nut muffins with apple are the perfect snack in between! 

INGREDIENTS (For 12 muffins)

1 medium apple
150g sugar
125g soft butter
2 eggs (size M)
1 tsp vanilla extract
175 g wheat flour (Type 405)
75 g ground hazelnuts
1½ tsp baking powder
1 tsp cinnamon
70 ml milk

PREPARATION
1st step
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees).  Line a muffin tin (12 wells) with paper cases.  Wash, peel, quarter and core the apple.  Cut the apple quarters into small cubes.

2nd step
Cream the sugar with the butter, beat the eggs and gradually stir them into the butter mixture along with the vanilla extract.  Mix the flour with ground hazelnuts, baking powder and cinnamon and stir into the dough. 

Finally add the milk to the dough and briefly stir everything until smooth.

3rd step
Mix the apple cubes into the dough by hand.  Pour 2 tablespoons of batter per muffin into the prepared paper cases and bake the apple-hazelnut muffins in the preheated oven for about 20 minutes until golden brown. 

The muffins with apples and nuts will keep in an airtight container at room temperature for at least 3 days.
