Fluffy Bread

Ingredients

Base:
300 ml water
7 g dried yeast
100 g sugar
2 eggs
1 tablespoon orange zest
1 tablespoon vanilla essence
75 ml vegetable oil
600 g wheat flour
3 g salt
200 g candied fruit

Preparation

In a bowl, mix the water, yeast, and sugar for 1 minute.
Let it rest for 10 minutes until the yeast is activated.

Add the eggs, orange zest, vanilla essence, and oil. Mix lightly.  Add the flour and salt. Knead for 7-10 minutes until you have a smooth, elastic dough.

Add the candied fruit and mix until evenly distributed.

With lightly oiled hands, form the dough into balls.

Place the balls in pre-greased pans, allowing room for them to rise.

Cover the pans with a clean cloth and let them rest until the dough has doubled in size.

Brush the balls with egg yolk to give them a shine.

Bake in a preheated oven at 180°C for 25 minutes or until golden brown.

Remove from the oven, let cool slightly, and enjoy a soft, fluffy, and flavorful loaf.

Perfect to share for breakfast or a snack!
